No stopping Outrigger Fiji’s culinary kingpins
Following on from a string of award wins in 2007, Outrigger on the Lagoon, Fiji’s culinary wizards bagged a whopping 16 medals at the annual Fiji Chefs Association awards in late December.
Based on the Coral Coast, Outrigger sent eleven chefs to compete against more than 150 from around the islands of Fiji at the two-day event held in Denarau.
The competition was spirited and comprised both static and live cooking heats unveiling degustation menus, mystery boxes, 3 course dinners, salads and desserts.
Outrigger on the Lagoon Fiji’s commis chef, Ravitesh Anand was elevated to ‘legend’ status by his colleagues when he won the prestigious Fiji Junior Chef of the Year, in addition to three silver medals.
Former 2005 Junior Fiji Chef of the Year, Veenal Reddy who is a junior sous chef at the 5-star resort, won three gold medals and was awarded second runner-up Chef of the Year.
Local produce from the sea and rich volcanic fields was utilised by the team whose kitchens are located 10 minutes from Fiji’s ‘salad bowl’ region framing the town of Sigatoka.
Other medals were awarded for some superb creations including Crab Encrusted Catch on Lobster & Corn Scottash, Kumala Mash, Asparagus drizzled with Chilli Oil and Lemon Butter. For the sweets enthusiast, the Passionfruit & Mango Pannacotta served with Rum Flambéed Bananas and Coconut Caramel Sauce was a hit.
General Manager of Outrigger on the Lagoon, Fiji, Darren Shaw paid tribute to the talented team drawing from their diverse cultural backgrounds to create high quality, innovative cuisine.
“Our latest round of awards underscores Outrigger’s commitment to cultivate and nurture our very talented gourmands.” “Fiji’s eclectic cuisine draws inspiration from our diverse cultures to enhance guests’ experiences,” Mr Shaw said.
“Under the guidance of executive chef Shailesh Naidu, his kitchen brigade continue to be the most decorated culinary team in Fiji’s history,” he added.
