North Carolina loves its barbecue, especially pork. In the east, they slow-cook the whole hog over wood, while in the west (in Lexington), they focus on pork shoulder. Both styles come with a vinegar sauce, but the Lexington one adds a bit of tomato sauce. If you're into oysters, check out the North Carolina Oyster Trail. Oysters are abundant year-round, with different flavors and oyster farmers are dedicated to sustaining the environment. The trail includes restaurants, markets and oyster farm tours. |
