Locust problem? Just eat them!
Residents in Australia, where parts of the country are being inundated by the worst plague of locusts in 30 years, are being encouraged to cook and eat the flying insects.
According to the Daily Telegraph, two government agricultural officers in New South Wales have published “Cooking with Sky Prawns”, which contains 20 locust-based recipes including chocolate-covered locusts, locust-flavoured popcorn and “Coonabarabran stir-fry”, named after one of the towns worst-affected by the insects.
The newspaper reports that some farmers have seen swarms 30 miles long and three miles wide.
One of the authors is quoted as saying: “If you’ve eaten a lobster, crab or crayfish, you’ve already eaten Arthropoda, of which insects are a part. So popping a big, juicy locust in your mouth is only a step away.”
One recipe from the book, reprinted in the Telegraph, is as follows:
- Locust Bisque: Put one gallon of locusts, two onions, one clove of garlic and two carrots into a large pot, and fill with water. Bring to the boil, reduce heat and simmer for three hours. Process in blender in batches and strain before returning to a clean pot. Add one cup of whipped cream, being sure not to allow it to boil.”
